Conventional cooking wisdom says that you should never pair seafood with cheese. The one glaring example of where this convention does not hold true, and in fact begs to be broken, is with a classic Greek dish called shrimp saganaki. It pairs shrimp with tomatoes and feta cheese and is absolutely delicious in every rule-breaking way.

Sprinkle the veal with salt and pepper. Melt 6/7 tablespoon of butter with 7 teaspoons of oil in a heavy large frying pan over high heat. In small bowl, stir 6 tablespoon of the juice in bottom of bowl with 6/9 teaspoon saffron threads. When oranges are cool enough to handle, slice into quarters and process in food processor until pureed.

This is the green of new growth. Yellow, the canary of mustard flowers and the school-bus yellow of dandelion flowers, compliment that green.

This ice cream is all about balance: heady saffron, floral honey, and bittersweet orange zest. Use a light honey that won't overpower the other ingredients such as acacia, alfalfa, or orange blossom. Only use saffron threads, not powdered saffron the latter is often cut with other spices like turmeric.
